Gérard Chagot, owner of the « Moulin Vert » has been introduced to great cuisine by its grand mother Marie Thérèse. She has been able to convey in him thru her love for life and good food what was going to become his true calling. After a classical journey of apprenticeship that taught him all the different sides of cookery, Gérard Chagot has spent 20 years perfecting traditional recipes from his childhood. His cooking is inspired by the seasons and by using only fresh produce that he purchases directly from the growers in Rungis with whom he has developed a very special relationship over the years.

Passionate about his job, Gérard Chagot has been able to surround himself with the perfect team. Everyone possesses its own individual special skill: sauce chef, pastry chef, Fish... Under the constant supervision and motivated by a 30 year old chef that came out of Ferrandi and was taught by a veteran of « La Tour d'Argent », the team has been working together for the last five years in the same configuration.
The waiters all wear a tie and apron: They certainly have style!
